Agape Meals

Food amounts are based on feeding team, pilgrims and 4th Day serving group. Brisket: 60-65 pounds untrimmed or 45 pounds trimmed (trimmed is preferred). Sam’s offers pre-packaged, pre-cooked, pre-sliced brisket that is very good and is used quite often for these meals. OR Chicken: 100 (for women) or 125 (for men) boneless, skinless chicken breasts; and chicken broth (see recipe). [table id=1 /] [table id=2 /] Green Beans:

5 cans green beans, restaurant size cans.

2 small or 1 large ham hock.

2 medium onions.

Slaw:

Make your own OR buy ready made at Sam’s (3 large packages and add 4 large apples but slice apples at last minute).

3 16 oz containers of dressing for slaw.

OR Salad: (these are suggestions, feel free to be creative)

14 mixed heads of lettuce (iceberg, romaine red tip, etc.).

1 large head red cabbage (chopped).

1 lb carrots, grated.

5 cucumbers, sliced.

6 boxes croutons (added at last minute).

25-30 medium tomatoes, cut up (added at last minute).

3 large bottles Italian dressing (added at last minute).

Since most people are eating healthier these days, we recommend using low fat ingredients whenever possible. Green Beans

Boil smoked ham hocks, then add onions sautéed in butter. Add green beans and simmer gently for at least one hour.

Potato Casserole

5 casseroles required for each Agape meal. Plan to bring them immediately from your oven. Transport hot dish in igloo cooler. You can prepare casserole ahead of time and freeze. If you do, take the casserole out of the freezer on Friday night or very early on Saturday morning.

Mix ½ cup margarine with potatoes, onion, cheese, soup, sour cream, salt and pepper.

Put mixture into buttered pan (one size under roaster size).

Mix remaining ½ cup melted margarine with corn flakes and sprinkle on top.

Cover with foil. Seal sides tightly.

Bake at 350 degrees for 2 hours; covered.

Grilled Chicken Breast

If chicken is not prepared and served on site, then prepare and ice chest by placing HOT chicken broth in it to keep chicken moist until served. Chicken should stay hot for several hours. Chicken broth is available at Sam’s in 1 quart cans, 2 cans to a package. 2 cans should be adequate.

Mix all marinade ingredients except lemon pepper.

Mix all ingredients of mop sauce.

Place chicken breasts in marinade and let sit for 3-4 hours.

Generously sprinkle chicken breast with lemon pepper after marinating.

Prepare grill with briquettes; use mesquite chips if available.

Place chicken on hot grill to sear meat.

Then move chicken to other parts of grill to cook at lower temperature until well done.

Carefully “dab” or “mop” chicken with mop sauce, being careful not to wash off the lemon pepper and

Marinade.

Add more lemon pepper as desired.
